SUGAR-FREE STRAWBERRY RECIPE

As a nutritionist, I often find myself experimenting with different flavours and ingredients in my kitchen and this strawberry jam has been my recent sweet creation. One of the many reasons I love this homemade jam is that it’s a healthy alternative to common store-bought jams which are often loaded with added sugars and preservatives. 

This spread is incredibly versatile and nutrients dense. Chia seeds contain omega 3-fatty acids and fibre. Strawberries are rich in antioxidants and are relatively low in sugar (fructose). Low glycaemic load makes it diabetic-friendly (if consumed in moderation), meaning it doesn’t cause drastic blood sugar spikes compared to other sugary condiments. The jam is delicious as a spread on whole-grain toast, mixed into natural yogurt, or used as a topping for pancakes or porridge. The possibilities are endless. And just a small jar of it makes a healthy and budget-friendly gift.

Here is how to make it:

Ingredients:

  • 200g strawberries, washed and hulled
  • 3 teaspoons chia seeds
  • 1 teaspoon lemon juice (freshly squeezed)
  • 1 teaspoon juice from soaked dates (optional, for added sweetness)

Instructions:

  1. In a saucepan over medium heat, gently cook the strawberries for about 5 minutes until they become soft and release their natural sweetness. Remove from heat and allow them to cool slightly.
  2. In a blender or food processor, blend the cooked strawberries until you achieve your desired consistency. You can leave some small chunks for a texture or blend until smooth for a velvety finish.
  3. Transfer the blended strawberries to a mixing bowl and stir in the chia seeds. Mix well to ensure the chia seeds are evenly distributed, creating a lovely jam-like texture.
  4. Add the lemon juice and the juice from soaked dates (if using) to the strawberry mixture. The soaked date juice adds natural sweetness without additional sugar, making it a healthier choice.
  5. Let the mixture sit for about 15-20 minutes, allowing the chia seeds to absorb the liquid and thicken the jam beautifully.
  6. Once the jam has reached your desired consistency, transfer it to a clean jar or airtight container. 

Additional Information

Strawberries are one of the most pesticide fruits, opt for organic berries if possible.

Storage:

The jam can be stored in an airtight container or a jar in the refrigerator for 1 to 2 weeks.
