Almond Flour Bread Sticks with Flaxseeds

These almond flour breadsticks are a wonderful healthy snack alternative to the traditional breadsticks, often called Italian grissini. They are packed with wholesome ingredients like almond flour and flaxseeds and offer delicious flavours and nutritional benefits. The combination of almond flour, flaxseeds and olives provides a dose of healthy fats, plant-based protein, and dietary fibre. All these ingredients promote satiety and support digestive health. They are naturally gluten-free and suitable for those with gluten sensitivities or dietary restrictions.

 Additionally, almond flour has a low glycaemic index, which means it causes a slower and steadier rise in blood sugar compared to refined flour. This helps prevent sudden spikes and crashes in blood sugar levels.

          These breadsticks are a versatile snack that can be enjoyed in various ways:

  • Savoury Healthy Delights: Serve them on their own as a wholesome snack, or pair them with your favourite dips like hummus or guacamole for an extra burst of flavour.
  • Picnic Perfection: Pack them in your picnic basket alongside fresh veggies, fruits, and lean protein for a healthy outdoor feast.
  • On-the-Go Snack: These breadsticks make a convenient on-the-go snack. Take them with you to work, on road trips, or any time you need a quick and nutritious bite.

          Here’s how to make them:

          Ingredients:

  • 250g almond flour
  • 1 teaspoon buckwheat flour (optional)
  • 1 tablespoon natural yogurt
  • 100g ground flaxseeds
  • 1 teaspoon mixed Provencal herbs
  • 6 large olives, finely chopped
  • pinch of Himalayan salt
  • 1/4 glass of lukewarm water

          Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the almond flour, buckwheat flour (if using), natural yogurt, ground flaxseeds, mixed Provencal herbs, chopped olives and Himalayan salt. Mix well to combine.
  3. Gradually add the lukewarm water to the mixture and continue mixing until a dough forms. The dough should hold together and not be too sticky. If needed, adjust the consistency by adding a little more almond flour or water.
  4. Transfer the dough onto the prepared baking sheet. Use your hands to shape the dough into thick pencil shape sticks (approximately 4-6 inches long).
  5. Place the breadsticks on the baking sheet, leaving some space between them.
  6. Bake in the preheated oven for about 12-15 minutes, or until the breadsticks turn golden brown and crispy.

7. Once baked, remove the breadsticks from the oven and allow them to cool slightly on a wire rack.

Storage:

If you plan to consume the breadsticks within a few days, you can store them at room temperature in an airtight container. They can typically stay fresh for up to 2 to 3 days. However, if you want to extend their shelf life, you can store them in the refrigerator for up to 4-5 days, and in the freezer for 2-3 months.
